Black olive Tapenade & Melted Goat Cheese Sandwiches

Ingredients:

8 tablespoons of Black Olive Tapenade see recipe here

12 slices dense, greek bread, about 1/2-inch thick

1 pound fresh goat cheese, sliced thin

4 tablespoons Extra Virgin Olive Oil

Directions:

Spread a tablespoon of the tapenade on 5 slices of bread. Top with two thin slices of goat cheese, then the remaining slice of bread to make a sandwich.

Heat the olive oil in a large nonstick skillet over medium heat.

When the oil is hot, place the sandwiches in the pan and cook on each side until crisp and golden brown.
