Artichokes a la Polita
Ingredients for Artichokes a la Polita
- 8 large artichokes
- 3 spring onion,
- 8 very small onion
- 2 sliced carrots
- 8 very small potatoes
- 2 tablespoons flour
- 1 cup extra virgin olive oil
- chopped dill
- salt & pepper to taste
Remove outer leaves of artichokes until tender ones remain and cut off 1-inch from the top. Also remove choke from the centre and peel the base all around.
Place cleaned artichokes in salted water with lemon juice added to prevent discoluration.
Put the whole onions in a hot flat saucepan with olive oil for 2 minutes and add the spring onions and carrots for 2 minutes. Add potatoes and 2 minutes later artichokes. Pour over the rest of the olive oil, the juice of a lemon and flour very well diluted in 1 cup water.
Sprinkle with chopped dill and enough hot water to barely cover the vegetables. Bring to boil and cover and simmer for 1 hour under a light fire until tender.
10 minutes before the end time add salt and pepper, shake gently and recover.
Serve “artichokes a la polita” on a serving dish and sprinkle with dill with feta chees and a white fruity wine like Malagousia.
